Twelve Sunsets

I spent around five hours chopping, stirring, grating and assembling various dishes in the kitchen on Sunday.  I even licked my finger a time or two.   Maybe you’ve heard of once-a-month cooking, a.k.a bulk cooking, freezer cooking, batch cooking.  Well, Sunday I was introduced to the whole process.   My kind friend Wendy came over after church and diligently walked me through each step.  First she carried in baskets and bowls, and huge bowls, and then more bowls of food.  One big bowl had chicken that she’d previously cut up and sautéd.  Others had sauces, chopped veggies, and cooked ground beef…essentially every ingredient needed to prepare four batches of three different recipes that she had selected.  Likewise, I selected three of my tried and true recipes and prepared the ingredients for four batches each.  I wasn’t as prepared as Wendy though, I was still dicing, and steaming, and stirring when she arrived.  Nevertheless, I caught up and the fun was at hand… It was time to assemble the dishes!  We started with her Chimichanga recipe first.  I spread the meat and cheese in the tortillas, then rolled em up, she brushed them with butter and broiled em in the oven.  When these were done, we moved on to the chicken broccoli casserole, lasagna, chicken pot pie, chili, and chicken enchilada casserole.  We each ended up with twelve meals to stock in our freezers, two of each dish.  Thus, you can call our adventure less-than-even-half-the-month-of-February cooking, but hey, it was a great initiation.  My kitchen still smells de-lish!

What’s that you ask?….why was I so willing to give up such a big chunk of my precious weekend slaving away in the kitchen for twelve frozen meals?  Well you see, around here the sun sets at dinner-making time.  If I’m stuck in the kitchen every evening, fussing with meal preparations, then that would mean I’d be missing out on this:

P.S.  You still have two days to find one for your sweetheart and yourself…they’re quite romantic you know.

  5. Those are amazing sunsets. You are right, you wouldn’t ever want to miss them. What a wonderful way to spend a day with a friend. It can be a bit lonely cooking sometimes, and you get to try someone elses food for a change.
