We are celebrating today with Banana Cake.

Thank you God, for this little ray of sunshine in our lives.


 She likes bananas, so we’ll be making this yummy cake:

Banana Cake

3/4 cup butter, softened

2  1/8 cup sugar

3 eggs

2 teaspoons vanilla

3 cups all purpose flour

1  1/2 teaspoons baking soda

1/4 teaspoon salt

1  1/2 cups buttermilk

2 teaspoons lemon juice

1  1/2 cup mashed bananas

Preheat oven to 275 degrees.  Grease & flour 9×13 pan. 

In a small bowl, mix mashed bananas with lemon juice, set aside.  In a medium bowl mix flour, baking soda, and salt; set aside.  In a large bowl, cream the butter and the sugar until light and fluffy.  Beat in the eggs one at a time, then mix in the vanilla.  Mix in the flour mixture alternately with the buttermilk.  Stir in the banana mixture.  Pour the batter into the pan and bake for one hour, or until center is done.  Remove from oven and cool.  Frost with cream cheese frosting.

Cream Cheese Frosting

1/2 cup butter, softened

8 oz. pkg. soft cream cheese

3  1/2 cup powdered sugar

1 teaspoon vanilla

Cream butter and cream cheese together.  Turn mixer to low and slowly add the powdered sugar.  Add the vanilla.  Spread on cool cake.

Now off to the kitchen, where she likes to help bake.
